When I was single, I was occasionally called Casey avocado at the lunch table.  I loved putting an avocado on anything, but I do recall times when I couldn’t get them.

With The Peach Truck no longer around and the berry patches closed it leaves me wondering, what is the best produce to purchase in late fall and winter?

Here are some of our favorite ways to enjoy to some of these winter vegetables.

Steamed broccoli with butter and garlic

Roasted beets with balsamic reduction and goat cheese
Baked kale chips
Sweet potato hash with kale
Beef cabbage with mashed cauliflower
Coconut oil roasted brussel sprouts

Spinach salad with marinated beets and goat cheese

Of course many of these vegetables can be enjoyed raw with hummus or a seasoned greek yogurt dip.

Many of the ingredients are also great for soups and chili as well which is perfect for winter months.

Thankfully, our local farmer’s market is going to be active throughout the winter so we’ll be able to get our hands on some great local winter produce. Check with your local farmer to see what they will have available.
